Protein Chocolate Chip Cookies

Genesis Gluten Free Gooey High protein Choc-chip cookies

Makes 36 cookies!

  • 1 cup salted butter* softened
  • 1.5 cup light brown sugar packed
  • 2 tsp pure vanilla extract
  • 2 large eggs
  • 3 cups Genesis High energy meal (vanilla or chocolate)
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1/2 tsp sea salt
  • 2 cups chocolate chips (or chunks, or chopped chocolate)

 

INSTRUCTIONS

  • Preheat oven to 190 degrees Celcius. Line a baking pan with parchment paper and set aside.
  • In a separate bowl mix flour, baking soda, salt, baking powder. Set aside.
  • Cream together butter and sugar until combined.
  • Beat in eggs and vanilla until fluffy.
  • Mix in the dry ingredients until combined.
  • Add 2 cups of choc chips and mix well.
  • Roll 2-3 TBS (depending on how large you like your cookies) of dough at a time into balls and place them evenly spaced on your prepared cookie sheets. (alternately, use a small cookie scoop to make your cookies).
  • Bake in preheated oven for approximately 8-10 minutes. Take them out when they are just BARELY starting to turn brown.
  • Let them sit on the baking pan for 2 minutes before removing to cooling rack.
  • When you remove the cookies from the oven they will still look doughy. THIS is the secret that makes these cookies so absolutely amazing! Please, I beg you, do NOT overbake!

High Protein, Gluten Free Flapjacks

Consider a family activity this weekend and get the kids involved in making some delicious GENESIS® High Protein, Gluten Free Flapjacks.  You can even consider fun shapes if you have moulds at home.  This breakfast will definitely have your family smiling.  Health has never been this easy.

Ingredients: 

(Makes 8 small flapjacks or 6 larger flapjacks)

  • 6 tablespoons (1 x 50 g sachet) GENESIS® High Protein, Gluten Free Powder (Chocolate, Banana or Vanilla)
  • 2 eggs
  • 1 tablespoon cocoa powder (optional if you would like chocolate flapjacks)
  • 1 large banana
  • pinch of salt

Method

Combine the peeled banana, eggs, Genesis, cocoa and salt in a blender. Blend until the mixture is smooth. Heat a non-stick frying pan over medium heat. (Add a very thin layer of oil, if you don’t have a non-stick pan.) Cook spoonfuls of the batter until golden brown on both sides (here’s your chance to get the kids to use the shapes). Serve with a fresh fruit of your choice. A drizzle of honey and sprinkle of ground cinnamon will also be delicious.

Genesis Gluten Free, High Protein Crumpet Recipe

Genesis Gluten Free, High Protein Crumpets

Ingredients

  • 150ml Genesis Gluten Free, High Protein Meal  (Chocolate or Original flavour)
  • 75ml water
  • 2 eggs
  • Pinch of salt
  • ¼ teaspoon baking powder
  • 1 banana
  • ¼ teaspoon oil
  • Optional  1 x medium heaped tablespoon of cocoa powder

Method

  1. Blend together all ingredients except oil until smooth.
  2. Grease a non-stick frying pan with oil and heat to medium.
  3. Use a ladle to pour mixture onto the frying pan.
  4. When bubbles on the surface start to pop, turn the crumpet using a spatula & cook the other side.
  5. Recipe makes ±5 crumpets with a diameter of 10cm.

Tropical Pina Colada Smoothie

INGREDIENTS

1 cup pineapple, peeled and diced
1 apple, skin and core removed and sliced
1 orange, peeled and segmented
1 cup fat-free milk
1 handful of ice cubes
3 tablespoons low fat coconut milk
50g (5 heaped tablespoons) of Banana flavour GENESIS® High Energy™

INSTRUCTIONS

INGREDIENTS

1 cup low-fat milk
1 teaspoon cocoa/hot chocolate

INGREDIENTS

1 cup fat-free milk
1 handful of ice cubes
1 kiwi fruit, peeled and cubed
1/2 teaspoon honey (can use 1/4 teaspoon stevia powder or sweetener to taste)
dash of cinnamon
50g (5 heaped tablespoons) of Vanilla flavour GENESIS® High Energy™

Berry-Banana Smoothie

INGREDIENTS

1 cup 100% pomegranate juice
½ cup fat-free milk
1 handful of ice cubes
1 banana, peeled and cut into chunks
2 tablespoons slivered almonds
1 teaspoon honey (or you can use stevia or sweetener to taste)
50g (5 heaped tablespoons) of Strawberry flavour GENESIS® High Energy™

INSTRUCTIONS

Add all the ingredients to your blender and blend together on full power until smooth.

Serves 1 – meal, serves 2 – snack

Berry Muffin

INGREDIENTS

1 cup soya flour / all-purpose gluten-free flour
OR all-purpose normal flour
1 cup Genesis vanilla/strawberry
1/2 tsp salt
2 tsps baking powder
3 tablespoons sugar
1 cup skim milk
1 egg
1 tablespoon oil
3/4 cup frozen berries

INSTRUCTIONS

1. Prehead oven to 180 degrees celsius
2. Mix all fluids together in a mixing bowl and lightly stir with a spoon until the mixture is well mixed.
3. Mix all the dry ingredients together
4. Mix all the fluids and dry ingredients together
5. Spoon equal quantities of the mixture into a well-greased muffin pan, two thirds full
6. Bake 15-20 minutes at 180 degrees celsius

Makes 12 medium muffins


Chocochino Muffin

INGREDIENTS
