Banana Muffins


1 cup soya flour / all-purpose gluten-free flour
OR all-purpose normal flour
1 cup Genesis Vanilla/Banana
1/2 tsp salt
2 tsps baking powder
3 tablespoons sugar
1 cup skim milk
1 egg
1 tablespoon vegetable oil
1 medium banana


1. Prehead oven to 180 degrees celsius
2. Mix all fluids together in a mixing bowl and lightly stir with a spoon until the mixture is well mixed.
3. Mix all the dry ingredients together
4. Mix all the fluids and dry ingredients together
5. Spoon equal quantities of the mixture into a well-greased muffin pan, two thirds full
6. Bake 15-20 minutes at 180 degrees celsius

Makes 12 medium muffins
